Banana Bread

Ingredients:

  • 4 small/med very overripe bananas or 3 larger ones, mashed well

  • 4 flax seed eggs

  • 2 tsp pure vanilla extract

  • 1 cup of flax milk (or seed/nut milk of choice)

  • 1 3/4 cups coconut flour

  • 1/2 cup tapioca flour

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1 tsp cinnamon or pumpkin pie spice

  • 1/4 tsp sea salt

Optional toppings:

  • An extra banana sliced (and set on top of the batter before baking)

  • Vegan butter

  • Fruit such as strawberries (sliced), blueberries or raspberries

Instructions:

  • Mash bananas, and then add all wet ingredients together (you may have to adjust the amount of flax milk you are bringing in depending on the size of bananas and add more flax eggs if you add in more seed/nut milk).

  • Mix in a large bowl all dry ingredients together.

  • Fold gently wet ingredients.

  • Bake at 350 for 60 minutes.

  • Let sit for an hour and then serve warm!
