Beet Hummus

Ridiculously easy and delicious! A hit at every potluck!

Serves 6


Ingredients:

  • 6 Beets (large

  • 3 Tbs. Tahini

  • 1 bunch Cilantro (optional)

  • 1/4 c. Garlic

  • Juice of 1 Lemon

  • 1/2 tsp. Sea Salt (optional)

  • 1/4 tsp. Pepper (optional)

  • Olive oil (optional for making thinner and into a spaghetti sauce)

Preparation:

  1. Boil or steam beets until cooked.

  2. Chop cilantro and garlic.

  3. Put all ingredients in a blender.

  4. Serve with your favorite GF crackers! Comes out looking like this every time!

  5. Adjust garlic as needed. If you want to turn this into an alternative spaghetti sauce, add olive oil.
