Vegan Potato Salad

Ingredients:

12 red potatoes

¾ cup of veganaise

6 celery stalks

8 radishes

½ red onion

½ bunch of green onion

3 Tbs. ground mustard

2 Tbs. dill

2 Tbs. chives

Pink sea salt to taste

Directions:

Wash all veggies and chop the potatoes into bite sizes while you bring a large pot of water to boil that will cover all of the potatoes. Add the potatoes to the water once boiling and cook for no more than 15 minutes. You can stick a fork through the potatoes once done.

Meanwhile, chop the celery and radishes into small slices, Chop the red onion into small pieces and chop the chives and green onion.

Once the potatoes are done, drain and let cool for 5 minutes. Then add the veganaise. Next add the other chopped veggies and herbs. Fold all the ingredients in.

Refrigerate for an hour before serving.
